Ingredients (serves 8)
- 200g almond flour
- 100g smooth almond butter
- 60ml pure maple syrup
- 2 tbsp pumpkin puree
- 1 tsp vanilla extract
- 2 tsp pumpkin pie spice
- 1/4 tsp salt
For coating:
- 50g granulated sugar
- 1 tsp ground cinnamon
Instructions
- In a large bowl, mix almond flour, almond butter, maple syrup, pumpkin puree, vanilla extract, pumpkin pie spice, and salt until well combined. The mixture shoul resemble a soft cookie dough.
- Chill the mixture in the refrigerator for 30 minutes to firm up slightly.
- Roll the mixture into small balls, about 1 tablespoon each.
- Shape each ball into a small pumpkin by creating ridges with a toothpick.
- Mix the granulated sugar and cinnamon in a shallow dish.
- Gently roll each "pumpkin" in the cinnamon sugar mixture to coat.
- Optional: Use a small piece of pretzel stick or a chocolate chip as a stem for each pumpkin.
- Refrigerate for at least 1 hour before serving to allow truffles to set.
