Here's a detailed version of the baking instructions:

  1. Preheat and Prep - Set your oven to 350°F (175°C). Thoroughly grease a 9x9 inch baking dish, making sure to coat the corners and sides well.
  2. Make Flax Eggs - Combine 2 tablespoons ground flaxseed with 6 tablespoons water in a small bowl. Stir well and let the mixture sit for 5 minutes until it becomes gel-like and thickened.
  3. In a large mixing bowl, combine the crushed bran sticks (2 cups/130g), diced apples (2 medium), and chopped walnuts (1/2 cup).
  4. In a separate bowl, thoroughly whisk together: 
    • oat milk
    • maple syrup
    • the prepared flax mixture
    • silken tofu
    • vanilla extract
    • cinnamon
    • nutmeg
  5. Pour the wet ingredient mixture over the dry ingredients and mix thoroughly until all the bran sticks are evenly coated.
  6. Transfer the mixture to your prepared baking dish, spreading it evenly. Sprinkle hemp seeds over the top.
  7. Place in the preheated oven and bake for 35-40 minutes. The top should be golden brown and the center should be set.
  8. For serving, you can top the breakfast bake with stewed apple slices and drizzle with maple syrup or dairy-free vanilla custard.
