Ingredients (serves 4-6)
- 130g bran sticks, crushed
- 2 medium apples, peeled & diced
- 240ml oat milk
- 60ml maple syrup or agave
- 2 tbsp flax seeds + 6 tbsp water
- 130g silken tofu
- 1 tsp vanilla extract
- 2 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 60g chopped walnuts
- 35g hemp seeds
For serving:
- Dairy-free custard
- Stewed apples
- Drizzle of maple syrup
Instructions
Here's a detailed version of the baking instructions:
- Preheat and Prep - Set your oven to 350°F (175°C). Thoroughly grease a 9x9 inch baking dish, making sure to coat the corners and sides well.
- Make Flax Eggs - Combine 2 tablespoons ground flaxseed with 6 tablespoons water in a small bowl. Stir well and let the mixture sit for 5 minutes until it becomes gel-like and thickened.
- In a large mixing bowl, combine the crushed bran sticks (2 cups/130g), diced apples (2 medium), and chopped walnuts (1/2 cup).
- In a separate bowl, thoroughly whisk together:
- oat milk
- maple syrup
- the prepared flax mixture
- silken tofu
- vanilla extract
- cinnamon
- nutmeg
- Pour the wet ingredient mixture over the dry ingredients and mix thoroughly until all the bran sticks are evenly coated.
- Transfer the mixture to your prepared baking dish, spreading it evenly. Sprinkle hemp seeds over the top.
- Place in the preheated oven and bake for 35-40 minutes. The top should be golden brown and the center should be set.
- For serving, you can top the breakfast bake with stewed apple slices and drizzle with maple syrup or dairy-free vanilla custard.
