This delicious vegetable and California walnut ragu for four takes only 15 minutes’ preparation and 40 minutes to cook

SERVES: 4

COOKING TIME: 10 MINUTES

Ingredients:

  • 3 red peppers, roasted, skinned and de-seeded
  • 4 tbsp extra virgin olive oil
  • 200g California Walnuts
  • 1 garlic clove, peeled and chopped
  • 1 tbsp tomato paste
  • 3.0g breadcrumbs
  • 2 tbsp pomegranate molasses 
  • 2 tsp pepper
  • 1 tsp sumac
  • ½ tsp caster sugar

Method:

Place all the ingredients in a food processor and blitz for five minutes until smooth. You can adjust the consistency with a splash of hot water if needed. Taste and adjust the seasoning.
