Cardamom Coffee Shake

The addition of dates and ground cardamom gives this iced coffee drink a definite Middle Eastern flavour - a real hint of the exotic. Cardamom improves digestion while dates and coffee create energy and enhance vitality.

Ingredients:

  • 4 Medjool dates, stoned*
  • 300ml organic milk
  • 125ml cold espresso coffee
  • 2 scoops vanilla ice cream
  • ½–1 tsp ground cardamom, plus extra for sprinkling

To Make:

  1. Put the dates in a saucepan with half the milk and heat very gently until the milk just reaches boiling point.
  2. Remove the pan from the heat and let cool completely. When cold, transfer the dates and milk to a blender and add the remaining milk, cold coffee, ice cream and cardamom. Blend until smooth.
  3. Pour into glasses and serve sprinkled with some extra ground cardamom.

*Deglet Nour Dates can be used instead.
