This Carrot & Walnut Easter Bread is naturally sweet, lightly spiced, and packed with texture from grated carrot and crunchy walnuts. Delicious toasted with nut butter or enjoyed as is!
Serves: 8-10 slices
Prep Time: 20 minutes (+ 1 hour rising)
Baking Time: 35 minutes
Ingredients
- 250g strong white bread flour
- 100g wholemeal flour
- 7g fast-action dried yeast
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp salt
- 50g soft brown sugar
- 210ml warm almond milk (or any plant milk)
- 2 tbsp olive oil
- 100g grated carrot
- 50g chopped walnuts
Method
- In a large bowl, mix the flours, yeast, cinnamon, nutmeg, salt, and sugar.
- Stir in the warm milk and olive oil, then mix in the grated carrot and walnuts. Bring the dough together.
- Knead on a floured surface for 8-10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and leave to rise for 1 hour until doubled.
- Preheat the oven to 180°C (160°C fan). Shape the dough into a loaf and place it in a greased bunt tin or on a baking sheet.
- Bake for 30-35 minutes until golden.
