This Carrot & Walnut Easter Bread is naturally sweet, lightly spiced, and packed with texture from grated carrot and crunchy walnuts. Delicious toasted with nut butter or enjoyed as is!

Serves: 8-10 slices

Prep Time: 20 minutes (+ 1 hour rising)

Baking Time: 35 minutes

Ingredients

  • 250g strong white bread flour
  • 100g wholemeal flour
  • 7g fast-action dried yeast
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 50g soft brown sugar
  • 210ml warm almond milk (or any plant milk)
  • 2 tbsp olive oil
  • 100g grated carrot
  • 50g chopped walnuts 

Method

  1. In a large bowl, mix the flours, yeast, cinnamon, nutmeg, salt, and sugar.
  2. Stir in the warm milk and olive oil, then mix in the grated carrot and walnuts. Bring the dough together.
  3. Knead on a floured surface for 8-10 minutes until smooth and elastic. Place in a lightly oiled bowl, cover, and leave to rise for 1 hour until doubled.
  4. Preheat the oven to 180°C (160°C fan). Shape the dough into a loaf and place it in a greased bunt tin or on a baking sheet.
  5. Bake for 30-35 minutes until golden.
