Chai is a fragrant spiced milky tea from India. This smooth grown-up take on a milkshake uses some of the same spices that feature in the tea, such as cardamom and cinnamon. Vanilla and a little sugar add sweetness.
Ingredients:
- 1 litre full-fat milk
- 75g light muscovado sugar
- 2 tbsp black tea leaves
- 1 vanilla pod, split lengthways
- ¼ tsp ground cinnamon
- 8 cardamom pods
- ¼ tsp ground allspice
- 3 scoops vanilla ice cream
To Make:
- Put 800ml of the milk, the sugar, tea leaves, vanilla pod, cinnamon, cardamom, and allspice in a saucepan and bring to the boil.
- Reduce the heat and simmer gently for five minutes, then turn off the heat, cover, and leave for 10 minutes. Strain into ice cube trays and freeze until solid.
- When ready to serve, put the frozen chai cubes in a blender with the remaining milk and the ice cream and whizz until smooth. Serve immediately.
