Cranberry And Heart Biscuits

 

Why not show that special someone how much you care with these deliciously sweet and fruity oat biscuits. You can be as creative as you like and change the add-in ingredients to your favourites like chocolate chips or chopped nuts.

We’ve used dried cranberries as they not only taste amazing, but they look pretty good too!


Dry Ingredients

  • 150g oat flour (using processed jumbo oats)
  • 30g jumbo GT oats
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp pink salt

Wet Ingredients

  • 5 tbsp melted coconut oil
  • 4 tbsp pure maple syrup or sweetener of choice
  • 2 chia eggs (2 tbsp chia seeds + 5 tbsp water, whisked together, set for 10 minutes)
  • 1 tsp pure vanilla extract

Add-in Ingredients

  • 70g dried cranberries

Method

  1. Preheat the oven to 180 °C (350 °F). Line a baking sheet with greaseproof paper.
  2. Mix all the dry ingredients (oat flour, oats, baking soda, baking powder and pink salt) in a medium bowl.
  3. Whisk the wet ingredients in a large bowl (coconut oil, coconut sugar, maple syrup, flax eggs and vanilla) until the mixture resembles a caramel texture.
  4. Combine the dry and the wet ingredients whisking until you get a sticky dough consistency. Fold the dried cranberries into the mixture.
  5. Cover the bowl and leave to sit for approximately 10-15 minutes at room temperature.
  6. Divide the mixture into 2 tablespoons of dough and layout on the prepared greaseproof baking sheet flattening the mixture into a biscuit shape. Finish by pressing extra dried cranberries into the tops of the biscuits.
  7. Bake for 8-12 minutes. Transfer to a cooling rack and allow to cool completely.
