These Cranberry & Walnut Flapjacks are packed with wholesome oats, crunchy walnuts, and juicy dried cranberries, all bound together with maple syrup and banana. Perfect for an energy boost or an Easter treat!

Ingredients
- 125g rolled oats
- 75g ground almonds
- 100g walnuts, chopped
- 75g dried cranberries
- 75g coconut oil or vegan butter, melted
- 100ml maple syrup
- 1 tsp vanilla extract
- ½ tsp cinnamon
- 1 banana mashed
Method
- Preheat the oven to 180°C (160°C fan) and line a baking tin with parchment paper.
- In a bowl, mix the oats, walnuts, cranberries, and cinnamon.
- In a saucepan, melt the coconut oil, maple syrup, and vanilla. Pour over the oat mixture and stir to coat. Stir in the mashed banana.
- Press into the tin and bake for 18-20 minutes until golden.
- Cool completely before slicing into bars.
