These Cranberry & Walnut Flapjacks are packed with wholesome oats, crunchy walnuts, and juicy dried cranberries, all bound together with maple syrup and banana. Perfect for an energy boost or an Easter treat!

Method

  1. Preheat the oven to 180°C (160°C fan) and line a baking tin with parchment paper.
  2. In a bowl, mix the oats, walnuts, cranberries, and cinnamon.
  3. In a saucepan, melt the coconut oil, maple syrup, and vanilla. Pour over the oat mixture and stir to coat. Stir in the mashed banana.
  4. Press into the tin and bake for 18-20 minutes until golden.
  5. Cool completely before slicing into bars.
