The ultimately creamy pasta dish is made from 100% plants! This creamy cashew pasta is the perfectly divine dinner to share with friends and family. With a creamy cashew sauce flavoured with fresh basil, garlic and nutritional yeast, the sauce is a delicious mix of cheesy, creamy and pesto-flavours, taking the pasta to the next level!
Prep time: 10 mins + 4hrs soaking time
Cook time: 12 mins
Ingredients (makes 4):
- 250g wholewheat spaghetti
- 75g raw cashews
- Juice of ½ lemon
- 2 tbsp nutritional yeast
- ½ tsp garlic powder
- ½ tsp salt
- A handful of fresh basil leaves
- 125 ml pasta water
- black pepper to taste
- ½ tsp chilli flakes
Method:
- Soak the cashews in water for 4-6 hours or ideally overnight until softened, then drain.
- Cook the spaghetti in salted water according to packaging instructions.
- Place the cashews in a blender alongside the lemon juice, nutritional yeast, garlic, salt, basil leaves and pasta water. Blend until smooth, then season to taste with black pepper. Mix the sauce with the pasta, then plate up and sprinkle with chilli flakes, ready to serve!
