Looking for a way to sneak some greens into your breakfast? These incredibly chocolatey waffles are here to save the day! Not only are they packed with hidden vegetables and protein-rich hemp seeds, but they're also so decadent that no one will believe they're actually good for you.

Think of them as your secret weapon for a nutritious breakfast that tastes like dessert - because who said healthy can't be indulgent?

Cooking time: 25-20 minutes

Ingredients (makes 8-12 waffles)

  • 2 tablespoons ground flaxseed + 90 ml water
  • 70g hemp seeds, finely ground
  • 2 medium courgette, grated (roughly 480g)
  • 240g whole wheat flour
  • 20g cocoa powder
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 480 ml plant milk
  • 60 ml maple syrup
  • 1 teaspoon vanilla extract
  • 85g dark chocolate chips

Instructions

  1. Start by making your flax eggs - combine ground flaxseed with water in a small bowl, stir well, and let it sit for 5 minutes until it becomes egg-like in consistency.
  2. While waiting, blend your hemp seeds in a blender until they reach a fine, flour-like consistency.
  3. Next, grate your zucchini and squeeze out excess moisture by wrapping it in a clean kitchen towel.
  4. In a large bowl, combine your dry ingredients: flour, ground hemp seeds, cocoa powder, baking powder, and salt.
  5. In a separate bowl, whisk together the wet ingredients: plant milk, maple syrup, flax eggs, and vanilla.
  6. Combine wet and dry ingredients, then fold in the grated zucchini and chocolate chips.
  7. Pour into a preheated, greased waffle iron and cook until golden brown.
  8. Serve drizzled with maple syrup, or your favourite toppings, such as with coconut whipped cream, extra chocolate chips, fresh raspberries, and a drizzle of melted dark chocolate.
