Fruity Flax Flapjack

This totally indulgent snack is much easier to cook and eat than it is to say.

Ingredients

  • 6oz oats
  • 2oz milled linseed
  • 4oz brown sugar
  • 6oz golden syrup
  • 4oz butter
  • 4 oz of dried fruit (we used a mixture of sultanas and chopped apricots)
Method

1. Heat oven to 180°C (fan). Line a 20cm baking tray with parchment paper.
2. Mix the oats, linseed and dried fruit together.
3. Melt the butter in a saucepan with the golden syrup. Add the sugar and heat until melted.
4. Add the dried mixture to the pan and mix well.
5. Turn on to the tray and press flat
6. Bake for 20mins or until golden brown.
7. When cool cut into squares and leave in tray until cold. Will keep in airtight container for up to a week.
