Treat your taste buds to something special with this homemade almond parmesan, made from only simple, wholesome ingredients! This grateable vegan parm is not only dairy-free but also delivers an unforgettable, tangy flavour that melts in your mouth. It's perfect for sprinkling over pasta dishes, salads, or any dish that could use a cheesy upgrade.

Prep time: 10 minutes
Cooking time: 45 minutes
Setting time: 4 hours (or overnight)

Ingredients (serves 15)

  • 1 cup (150g) almonds, blanched
  • 1 cup (240ml) water
  • 1 cup (160g) potato starch
  • 1/2 cup (8 tablespoons) nutritional yeast
  • 1 teaspoon sea salt
  • 2 tablespoons white miso paste
  • Juice of one lemon
  • 1 teaspoon dijon mustard

Instructions

  1. Place all ingredients in a blender and blend on high speed until completely smooth.
  2. Pour the mixture into a Pyrex dish and smooth out the top with a spatula.
  3. Cover with a lid or aluminium foil and steam the mixture for 45 minutes. If you don't have a steamer, use a strainer over a pot with boiling water and cover everything.
  4. Once steamed, let the disk cool down and then transfer it to the fridge to set for at least 4 hours, but preferably overnight.
  5. Remove from the fridge and gently take the parmesan out of the pyrex dish. Cut itinto wedges, and enjoy your homemade Vegan Parmesan Cheese made from almonds!
