Looking for a quick energy boost? These Monster Energy Balls are packed with all the goodness you need to keep you going throughout the day! Using a delicious mix of dates, seeds, and nut butter, they’re perfect for an on-the-go snack or post-workout bite. 

Ingredients:

Eyes made from fondant icing

Method:

  1. In a food processor, blend the dates until they form a sticky paste.
  2. Add the pumpkin seeds, sunflower seeds, nut butter, cocoa powder, chia seeds, desiccated coconut, vanilla extract, and sea salt.
  3. Pulse until well combined, but with some texture remaining.
  4. Roll the mixture into small balls using your hands.
  5. Roll the balls in extra desiccated coconut or cocoa powder for coating.
  6. Add the little eyes
  7. Store in an airtight container in the fridge for up to a week.
