Looking for a healthy and satisfying snack? Try these homemade nut and seed crackes paired with creamy hummus and fresh vegetable sticks. These crackers are packed with a variety of seeds and crunchy goodness which means they are perfect for dipping and snacking on throughout the day. 

Ingredients: 

Method:

  1. Preheat your oven to 150°C (300°F, Gas Mark 2).
  2. In a large mixing bowl, combine all the seeds, almond flour, sea salt, and herbs.
  3. Spread the mixture evenly on a baking tray lined with parchment paper. Use a spatula to spread it as thinly as possible. You can place another piece of parchment over the top and use a rolling pin to roll out evenly.
  4. Remove the parchment paper, then score the dough with a knife to create cracker shapes.
  5. Bake for 1 hour, or until the crackers are dry and crisp.
  6. Let the crackers cool completely before breaking them into pieces along the scored lines.
  7. Store in an airtight container.

Hummus:

Ingredients:

  • 400g cooked chickpeas
  • 2 tbsp tahini
  • 1 garlic clove, minced
  • Juice of 1 lemon
  • 3 tbsp extra virgin olive oil
  • Salt and pepper, to taste
  • 2-3 tbsp water
  • Optional: paprika or cumin for extra flavour 

Method:

  1. Place the chickpeas, tahini, garlic, lemon juice, and olive oil in a food processor.
  2. Blend until smooth, adding water as needed to achieve your desired consistency.
    Season with salt and pepper to taste.
  3. Serve in a bowl, drizzled with a bit more olive oil and a sprinkle of paprika or cumin if desired.

Vegetables

Suggestions:

  • Carrot sticks
  • Bell pepper strips

Method:

  1. Wash and cut the vegetables into bite-sized pieces
  2. Arrange them on a platter alongside the hummus and crackers for serving
