How adorable are these nutty ghost cookies? If you were still looking for a delicious Halloween bake, then look no further! These cute little ghosts are created with a simple vegan sugar cookie base and super quick and easy to make. Cookie cutters at the ready!

Ingredients (makes 10-12):

  • 1 flax “egg” (1 tbsp flaxseeds + 2 tbsp water)
  •  200g plain flour
  • 1/4 tsp vanilla powder or 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • a pinch of salt
  • 100g vegan butter at room temperature
  • 150g caster sugar
  • 10-12 large nuts for decor (pecans, walnuts, almonds)

Method:

  1. First, prepare the flax “egg” by mixing flax seeds and water. Set them aside to soak.
  2. In the meantime, preheat your oven to 170C and line a baking tray.
  3. In a large bowl, combine the flour, vanilla powder, cinnamon, baking powder, baking soda and salt. To avoid any lumps, it’s best to sift the ingredients. If you’re using vanilla extract instead of powder, add it into the flax seeds instead
  4. In a separate bowl cream together the butter and sugar using an electric hand mixer, then slowly blend in the flax egg and the dry ingredients.
  5. Transfer the cookie dough into the fridge for 20-30 minutes or until firm enough to roll out to roughly 3-4mm thickness. Use a ghost cookie cutter to shape your cookies and remove the excess dough. Gently lift the hands of each ghost and place a whole nut in between.
  6. Bake the cookies in the preheated oven for 12-15 minutes. Remove from the oven and allow them to cool down before removing them from the baking tray.
