Start your day on a high note with this “posh” Butter Bean and Sun-Dried Tomato Sourdough Toast! This recipe combines the creamy goodness of tender butter beans and the rich flavour of sun-dried tomatoes, all served on crispy toasted sourdough. Perfect for a posh breakfast or a satisfying brunch, and it's both delicious and nourishing!

Ingredients (serves 2)
- 2 slices of sourdough bread, toasted
- 200g dried butter beans, soaked and cooked (or 2 tins of butter beans, drained)
- 1 tbsp vegan butter or olive oil
- 75g sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 125 ml vegetable broth
- 4 tbsp vegan cream cheese
- Juice of ½ lemon
- Fresh parsley and basil
- Salt and pepper, to taste
Instructions
- Give those dried butter beans a good rinse and soak them in water overnight or for at least 8 hours. Drain and rinse them again before you start cooking.
- Pop the soaked beans into a pot and cover them with fresh water. Bring to a boil, then lower the heat and let them simmer for 1 to 1.5 hours, or until they’re nice and tender. Drain and set aside.
- Heat the vegan butter or olive oil in a pan over medium heat. Toss in the garlic and cook until it smells amazing.
- Add the cooked butter beans, sun-dried tomatoes, and vegetable broth to the pan. Let everything simmer together for 10-15 minutes until the beans are tender and the broth has reduced.
- While the beans are cooking, toast your sourdough bread until it's golden and crispy.
- Spread a generous layer of vegan cream cheese on each slice of that toasted sourdough.
- Season the beans with salt and pepper to taste, then pile the bean mixture onto your prepared sourdough slices.
- Drizzle with fresh lemon juice and top it all off with some fresh parsley and basil, and sprinkle a few pumpkin seeds over the top.
- Serve immediately and enjoy a posh and tasty breakfast treat!
