Fuel your day with these easy-to-make Pumpkin Seed Energy Bars! These bars are packed with oats, seeds, almonds, and dates, providing a perfect on-the-go or post workout energy boost. They're super simple to prepare and loaded with plant-based protein, healthy fats and fibre.

Method:

  1. Line a square baking dish with parchment paper.
  2. In a food processor, blend the pitted dates until they form a sticky paste.
  3. Add the pumpkin seeds, sunflower seeds, chopped almonds, oats, chia seeds, flaxseeds, melted coconut oil, vanilla extract, and a pinch of salt to a bowl, mix and add in the date paste
  4. Mix to combine.
  5. Transfer the mixture to the prepared baking dish and press it firmly and evenly into the dish.
  6. Refrigerate for at least 1 hour until set.
  7. Once set, lift the mixture out of the dish using the parchment paper and cut it into bars.
  8. Store the bars in an airtight container in the fridge for up to a week.
