Fuel your day with these easy-to-make Pumpkin Seed Energy Bars! These bars are packed with oats, seeds, almonds, and dates, providing a perfect on-the-go or post workout energy boost. They're super simple to prepare and loaded with plant-based protein, healthy fats and fibre.
Ingredients:
- 200g pitted dates plus 50ml water
- 100g pumpkin seeds
- 150g oats
- 50g sunflower seeds
- 50g chopped almonds
- 2 tbsp chia seeds
- 2 tbsp flaxseeds
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- Pinch of salt
Method:
- Line a square baking dish with parchment paper.
- In a food processor, blend the pitted dates until they form a sticky paste.
- Add the pumpkin seeds, sunflower seeds, chopped almonds, oats, chia seeds, flaxseeds, melted coconut oil, vanilla extract, and a pinch of salt to a bowl, mix and add in the date paste
- Mix to combine.
- Transfer the mixture to the prepared baking dish and press it firmly and evenly into the dish.
- Refrigerate for at least 1 hour until set.
- Once set, lift the mixture out of the dish using the parchment paper and cut it into bars.
- Store the bars in an airtight container in the fridge for up to a week.
