Start the day with this crunchy, homemade pumpkin seed granola perfectly sweetened with maple syrup and packed with oats, pumpkin seeds, chia seeds and coconut flakes, this granola is ideal for breakfast or as a healthy snack.
Ingredients:
- 200g rolled oats
- 100g pumpkin seeds
- 50g sunflower seeds
- 50g chopped almonds
- 50g coconut flakes
- 2 tbsp chia seeds
- 1 tsp cinnamon
- 1/2 tsp salt
- 120ml maple syrup
- 60ml coconut oil, melted
- 1 tsp vanilla extract
Method:
- Preheat your oven to 160°C (320°F, Gas Mark 3) and line a baking tray with parchment paper.
- In a large mixing bowl, combine the oats, pumpkin seeds, sunflower seeds, chopped almonds, coconut flakes, chia seeds, cinnamon, and salt.
- In a small saucepan, warm the maple syrup (or honey), coconut oil, and vanilla extract until melted and combined.
- Pour the wet mixture over the dry ingredients and mix thoroughly until evenly coated.

- Bake for 25-30 minutes, stirring halfway through, until golden brown.
- Let the granola cool completely before transferring to an airtight container.
