These Spiced Hot Cross Pancakes are packed with cinnamon, nutmeg, and orange zest, giving all the flavours of a classic hot cross bun in a fluffy pancake stack. Top with walnuts, maple syrup & extra zest for the perfect festive treat!

Ingredients
- 180g plain flour
- 1½ tsp baking powder
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- 250ml almond milk (or any plant milk)
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- 100g raisins or sultanas
- Coconut oil, for frying
Toppings:
- Chopped walnuts
- Maple syrup
- Plant based yogurt
- Extra orange zest
Method
- In a bowl, mix the flour, baking powder, cinnamon, nutmeg, and orange zest.
- In a jug, whisk together the almond milk, maple syrup, and vanilla. Pour into the dry ingredients and mix until smooth. Fold in the raisins.
- Heat a little coconut oil in a pan over medium heat. Spoon in the batter to form small pancakes. Cook for 2-3 minutes on one side, then flip and cook for another 2 minutes.
- Serve warm with chopped walnuts, a drizzle of maple syrup, yogurt, and extra orange zest.
