These sugar cookies are so easy to make, are kid-approved and are sweetened with only honey. They are grain-free and dairy-free (can use ghee or butter if you wish). Perfect for any occasion, and such a beautiful activity to do with your children during the up-coming holidays!
Ingredients:
- 1 cup ground almonds
- 4 TBSP coconut flour
- 2 TSP vanilla
- 1/4 cup honey
- 1/4 cup coconut oil melted
- 1/2 TSP baking powder
- Pinch of salt
Method:
- Combine all of the dry ingredients in a large bowl and mix
- Add the honey, melted coconut oil and vanilla and combine until it forms a dough
- It’s best to freeze for around 30 mins to firm up
- Roll out between two parchment paper pieces with a rolling pin
- Use cookie cutters of choice and then bake on 180C for around 10 minutes or until the edges turn light brown
Recipe For Cookie Icing:
Ingredients:
- 1/4 cup coconut butter melted (remove the coconut butter with a spoon, place it into a container standing in a bowl of hot water. Do not stove heat or it will not melt properly)
- 2 TBSP honey
- 1 TSP vanilla
Method:
- Stir in honey and vanilla to melting coconut butter
- For colour (optional) use fruit powders and spirulina and mixed through the coconut butter mixture
