This vegan caramel nut tart is a decadent dessert that will satisfy every sweet tooth! Packed with a delicious combination of walnuts, macadamia nuts, and peanuts, this tart is sure to impress. The vegan caramel sauce adds a touch of indulgence that will leave you wanting more!

Ingredients:
- 60g walnuts, chopped
- 75g macadamia nuts, chopped
- 75g peanuts, chopped
For the tart base:
- 180g plain flour
- 110g vegan butter, cold & cubed
- 2-3 tbsp ice water
For the vegan caramel:
- 200g granulated sugar
- 60 ml water
- 2 tbsp vegan butter
- 120 ml full-fat coconut milk
- 1 tsp vanilla extract
Method:
- Preheat the oven to 190C.
- In a large bowl combine the flour, butter and ice water until a dough forms. Roll out the dough on a lightly floured surface to roughly ¼-inch thickness.
- Place the dough into an 8-inch tart pan and trim the edges, then set aside.
- In a large non-stick pan, mix the sugar and water over medium heat until the sugar dissolves.
- Use a cooking thermometer and bring the mix to a boil. Cook for 7-8 minutes or until the mix reaches 160C - 180C and turns amber.
- Remove from the heat and immediately whisk in the vegan butter, coconut milk and vanilla extract until smooth. Let the caramel cool for 5 minutes.
- Add the walnuts, macadamia and peanuts to the tart base and pour the caramel sauce on top, then bake the tart for 25-30 minutes or until the filling is golden.
- Let the tart cool for at least 15 minutes before slicing and serving.
