This vegan caramel nut tart is a decadent dessert that will satisfy every sweet tooth! Packed with a delicious combination of walnuts, macadamia nuts, and peanuts, this tart is sure to impress. The vegan caramel sauce adds a touch of indulgence that will leave you wanting more!

Cook time: 25-30 minutes

Ingredients:

For the tart base:

  • 180g plain flour
  • 110g vegan butter, cold & cubed
  • 2-3 tbsp ice water

For the vegan caramel:

Method:

  1. Preheat the oven to 190C.
  2. In a large bowl combine the flour, butter and ice water until a dough forms. Roll out the dough on a lightly floured surface to roughly ¼-inch thickness.
  3. Place the dough into an 8-inch tart pan and trim the edges, then set aside.
  4. In a large non-stick pan, mix the sugar and water over medium heat until the sugar dissolves.
  5. Use a cooking thermometer and bring the mix to a boil. Cook for 7-8 minutes or until the mix reaches 160C - 180C and turns amber.
  6. Remove from the heat and immediately whisk in the vegan butter, coconut milk and vanilla extract until smooth. Let the caramel cool for 5 minutes.
  7. Add the walnuts, macadamia and peanuts to the tart base and pour the caramel sauce on top, then bake the tart for 25-30 minutes or until the filling is golden.
  8. Let the tart cool for at least 15 minutes before slicing and serving.
