A crunchy, vibrant slaw with sweet raisins and nutty pumpkin seeds, dressed in a light apple cider vinaigrette.
Serves: 4
Prep Time: 15 minutes
Ingredients:
- 1/2 red cabbage, finely shredded
- 2 carrots, grated
- 50g raisins
- 2 tbsp pumpkin seeds
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp maple syrup
- Salt and pepper, to taste
Method:
- In a large bowl, combine the shredded cabbage and grated carrots.
- In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper.
- Pour the dressing over the vegetables and toss to coat evenly.
- Stir in the raisins and pumpkin seeds just before serving for added texture and sweetness
