Vital Wheat Gluten is made by washing wheat flour dough with water until starches dissolve, leaving behind the gluten. The gluten is then dried and ground into a fine powder.
It makes a valuable ingredient for boosting the protein in dishes such as vegetarian and vegan recipes.
It is also often used in baking, particularly recipes that involve grain or low-gluten flours such as whole wheat or rye. Adding vital wheat gluten helps improve the elasticity and rise of the dough.
Usage: Use a tablespoon of vital wheat gluten per 250g of flour in your baking to help improve the elasticity and structure of doughs.
